notes from the kitchen: five minute raw apple pie crumble
This is my new favorite raw foods snack! Crisp, tart autumn apples, rich almonds, and sweet dates are tossed together for a perfect little snack full of natural sugars, protein, and fats! If you are celebrating October Unprocessed with us, this is a perfect whole food treat that we would like to encourage you to try.
Is it like a real apple pie? Definitely not- but it captures the sweetness and decadence of the pie in just a few minutes- no preheated oven or rolling pin required! My coworker created a recipe like this for one of her raw cooking classes, and over a few days I ate the entire plate of leftovers- it was that good! Thanks, Mama T for raw goodness.
Raw Apple Pie Crumble
1 perfectly crisp apple, sliced into thin pieces
1/4 cup almonds (raw or roasted)
1/4 cup chopped dates
2 Tablespoons whole oats
2 Tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
- In a food processor, grind almonds until fine. Turn out into a bowl.
- Add chopped dates to processor, and process until finely chopped. Add to almonds.
- Add oats to processor, and blend into a powder. Add to almonds and dates. Stir in coconut oil, vanilla, and cinnamon. Use your fingers to separate date pieces and make mixture cohesive.
- Add apples to a bowl, and toss with almond mixture. That’s it! Enjoy!
