Tofu is a versatile and wholesome soy food to add into your diet- and this marinated tofu is perhaps the most flavorful way to incorporate it. This simple Marinated Tofu, with red wine vinegar, olive oil, herbs, mirin, and soy sauce is certainly one of the very best tofu recipes ever. And it’s super easy! Though the tofu needs to marinate overnight and then bake for 35 minutes, it’s all hands-off time, so you don’t have to work too hard on this meal. And don’t worry about mixing basil with soy sauce – the culture clash of Asian and Italian-inspired ingredients makes creates an epic tofu for eating in sandwiches, wraps, or served alongside greens and grains.
1 (14-oz) block extra-firm tofu
¼ cup olive oil
¼ cup red wine vinegar
2 Tablespoons soy sauce
2 Tablespoons mirin (see note)
1 Tablespoon dried garlic (or garlic powder)
1 Tablespoon each fennel seeds, oregano, and
1 teaspoon each black pepper and coriander
- Slice tofu into triangles and lay into a 9×13 baking dish or rimmed baking sheet.
- In a small bowl whisk remaining ingredients together and pour over tofu. Shake pan to distribute marinade evenly, ensuring that marinade coats tops. Let marinate overnight in refrigerator.
- Preheat oven to 350ºF. Place tofu in oven and bake 20 minutes, then flip tofu. Bake for 10-15 more minutes, until tofu is slightly crisp to the touch and marinade has been absorbed. Enjoy immediately or save for sandwiches and wraps later in the week!
Note: If you don’t have mirin (a Japanese alcohol-free rice cooking wine) in your panty, you can substitute any red or white wine, or add a few teaspoons of honey or agave.
Yield: 12-18 pieces tofu, or 3-4 servings
