Superfood Salad Recipe

Spring is right around the corner! For many it’s been a shockingly cold winter, and I can just imagine that bright green things will make it all better! This SUPERFOOD Salad recipe featuring a lovely purple Acai Berry Dressing was a little recipe I made up to highlight the myriad health benefits offered by green things, and to show my cooking students how truly healthful and flavorful a salad can be! Salad is no long just some wilted lettuce and pale tomato slices– this salad is a MEAL!

Leafy greens, root veggies and sprouts give this salad color, texture and bursts of wild flavor. The Acai Berry Dressing is inspired by the Maqui Berry Balsamic from Life Foods Inc. and offers many health-boosting ingredients as the salad itself. This is also a fully raw recipe, which means everything is in its natural form, fully alive and functional. For more about the benefits of raw foods (and the full recipe), check out this post on Green UPGRADER.
