This might deviate from the VeganMoFo theme of favorite cooking class recipes: I’m not sure if this would qualify as a true favorite of the cooking class students, but it was definitely the recipe that most intrigued them all! Chopped cauliflower is used as a base for this grain-free ‘rice’ dish. This can be eaten raw or cooked, and served solo or with green or nori wraps or pilafs.

Cauliflower Fried ‘Rice’
3 cups roughly chopped cauliflower
pinch each salt and pepper
2 Tablespoons coconut or olive oil
½ cup thinly sliced red onion
1½ cups thinly sliced napa cabbage
1 cup thinly sliced red bell pepper
1 cup shredded carrots
½ cup chopped green onion
1 Tablespoon coconut aminos
- Pulse cauliflower, salt, and pepper in the processor until the shape of rice. Remove and set aside.
- In a large skillet, heat oil until warm. Add onions and cook until browned. Add cabbage, peppers, carrots, and green onion and sauté for 5-10 minutes until vegetables are tender.
- Add cauliflower mixture with coconut aminos. Stir until combined and warmed through.
- Serve in wraps, or alongside other vegetables for a grain-free meal! Enjoy!
Yield: 3-4 servings
