
A galette is a delicious, rustic type of pie that works great with sweet or savory fillings. Originally this dough was created as a gorgeous zucchini galette, but my coworker took the recipe and created something different and amazing. A simple mash of butternut squash, Italian herbs, and olive oil is paired with some creamy caramelized onions for a fancy dinner or lunch. This galette is rather rich (with both butter and sour cream), so pair it with lots of veggies and big salad!
