
This raw cheesecake is truly divine. I’ve made some raw cheesecakes before, but this Raw Caramel Apple Cheesecake takes vegan decadence to another level. This recipe is the creation of my coworker at our local health food store. In preparation for a holiday cooking workshop, we wanted to be sure to include some raw desserts as well, and this is the radical treat she came up with on the spot. Raw desserts are loved by vegans, gluten-free folks and omnivores, the photo below should show you that raw vegan desserts can also be stunningly beautiful and make a splash at any dinner party.
Though this was created in the time of the holidays, it would be impressive any time of year. Made with a few varieties of nuts, fresh fruit and natural sweeteners, this Raw Caramel Apple Cheesecake is sure to please. Raw Pear and Apple Cheesecake
Crust:
1 cup pecans
½ cup pitted Medjool dates
Pinch of salt
Filling:
3 cups cashews, soaked one hour
½ cup fresh lemon juice
1 cup raw agave nectar
1 cup coconut oil
1½ teaspoons vanilla extract
½ teaspoon salt
Caramel Sauce:
½ cup pitted Medjool dates, soaked for 20 minutes
1 Tablespoon raw vanilla powder
1 Tablespoon maca powder
1 teaspoon psyllium husk
Pinch of salt
2 pears, thinly sliced
2 apples thinly sliced
