
Well, if there was ever a holiday to celebrate on Vibrant Wellness Journal, this surely is it! I learned from listening to Marketplace yesterday on my way home that today, June 17 is National Eat your Vegetables Day. And I think it’s a great damn day.
We all know we should eat more vegetables. They have fiber, and vitamins, and probably some other good stuff in there too. But vegetables are not on everyone’s plate at every meal for a variety of reasons. First, our world is dominated by unhealthy processed food crap that is designed to make us crave more useless processed crap. Second, all the ingredients for that crappy food is subsidized by the government, making it artificially cheaper than whole, delicious fruits and veggies. Finally, we’ve lost the ability to cook for ourselves. When presented with a grocery store or market full of wild looking plants, many people simply choose not to engage.
But we’re all about helping you out. So here are my top three favorite recipes for my top three favorite vegetables: kale, broccoli and pumpkin. Choose the one that appeals to you the most and run with it! What’s your favorite vegetable?
