I developed this amazing vegan Sloppy Joes recipe when I was working with Life Foods, a Maui-based food company that has created a delicious line of vegan, gluten-free, superfood products for everyday meals. This recipe features the Breakfast Sausage, which is a damn good product by itself. But, mixed with some perfectly cooked lentils, tomatoes and a few spices, this meal really sings. I like it served best with some homemade sauerkraut and lots of condiments. Get some today!

Vegan Sloppy Joes
4, 2.75 oz Life Foods Breakfast Patties
1/2 cup brown lentils
2 cups water
2 Tablespoon olive oil
1 cup chopped onion
1 cup chopped green pepper
1 clove garlic, minced
1 15-ounce can crushed, fire-roasted tomatoes
1/4 cup Life Foods Red or ketchup
Pinch each sea salt and black pepper
4 each gluten-free or sprouted grain buns (I like Happy Campers brand buns)
Your favorite sauerkraut
Homemade mayo, vegan mayo or mustard
