Cruelty-free Easter Brunch: Celebrate the Holiday with Plant-based Foods

Falling in the middle of Spring (hopefully, for most of you!), Easter is a great time to focus on the bounty of early Springtime vegetables and fruits. These main dishes include two brunch staples usually made with eggs: frittata and Strata. Both feature magical tofu and an array of flavors to make even strict omnivores to fall in love with the wonder of soy. These take a bit of time to prep, but can be made a day ahead. The Chicken Salad and tuna salad are great light dip or sandwich items that are perfect for this time of year. And polenta, heck, that’s ALWAYS a winner.
