Falling in the middle of Spring (hopefully, for most of you!), Easter is a great time to focus on the bounty of early Springtime vegetables and fruits. Fresh light greens, baby root veggies, sweet fruits and so much more can build the bounty of your table to create a cruelty-free Easter feast. These recipes would also work for a delicious vegan Easter dinner.

Main Dishes:

These main dishes include two brunch staples usually made with eggs: frittata and Strata. Both feature magical tofu and an array of flavors to make even strict omnivores to fall in love with the wonder of soy. These take a bit of time to prep, but can be made a day ahead. The Chicken Salad and tuna salad are great light dip or sandwich items that are perfect for this time of year. And polenta, heck, that’s ALWAYS a winner.
