
Sometimes you just need a cookie, right?
And of course homemade is better that store-bought. But who needs a whole batch of cookies lying around? And all those dishes and all those ingredients…

So we have created some small batch chocolate chip cookie recipes to come to your rescue. Small batch cookies are perfect: you get to satisfy your cookie craving with homemade baked goods, but you don’t have to make a huge batch and have them hanging around for days, weeks or months. If you are the type to ALWAYS want to have homemade cookies around, then you can ignore this post and just keep doing what you’re doing with full batches of cookies!
Small batch cookies are my favorite types of cookies to make because they are faster AND it lets you be a little more creative in the kitchen.
Making smaller batches means that clean up is a bit easier, you need fewer ingredients, and (just in case you mess up) you waste less. Also, if you’re making less, the prep time is a bit faster, and if there is just one batch, that means baking time is often faster too! As an added green living bonus, you can cook small batches of cookies in your toaster oven, which means less energy is used to heat and bake your treats.

If you want to take your favorite cookie recipe and make a smaller batch, you can follow Becky’s tricks for dividing a recipe into smaller batches. Note that with cookie recipes, halving or even quartering the recipe is pretty dang easy. But if you’re making a cake you can’t half the recipe or the cake won’t fit into the pan.

1. Chocolate Chip Nut Butter Cookies

This are my go-to favorite chocolate chip cookie recipe: they are mega easy, healthful and super delicious. The recipe calls for nut butter, and while any type will work, my favorite is tahini. Try with almond butter, sunflower seed butter and peanut butter. Don’t forget to add mini or regular chocolate chips to make it even tastier! Extra homemade bonus points if you make your own nut butter!

2. Small Batch Peanut Butter Cookies

I love the super simplicity of this recipe from Ashlae over at Oh Ladycakes. These cookies are grain-free, gluten-free and vegan, and feature some ingredients that you surely have at home right now. As written they don’t contain chocolate chips, but she tells you when to add them into the recipes should you choose to add them!

3. Small Batch Chocolate Chip Coconut Macaroons

These little dark chocolate lovelies are another easy-peasy recipe; one of the things I like most is that you’re able to use any type of flour you have on hand. I’ve used almond flour, spelt flour, ground up oats and even regular all-purpose flour successfully, and they’ve all been great. And, of course, the combo of chocolate and coconut is pretty divine, and even better when you can toss them together into a simple sweet mini cookie. If you are feeling the darkness, adding chocolate chips is pretty great awesome.

4. Banana Chocolate Chip Cookies (gluten-free)

I’ve been making this simple recipe for years after reading it on 101 Cookbooks. Heidi got this gluten-free, sugar free and dairy-free recipe from a friend, and you will be grateful that she did. Keep frozen bananas on hand for these simple treats.

5. Chocolate Chip Almond Flour Cookies

Here’s another version of small batch chocolate chip cookies that are gluten-free, grain free, and so so so good! This is inspired by my friend the Vegan Lisa, and I’ve been making them for years. The chocolate chips are pretty awesome here, but if you’re feeling it, raisins, currants or chopped up dates would do well too. This is the recipe that my sweetie and I can eat in one sitting, no joke.
