I was sifting through my holiday baking recipes a few days ago (haha, sifting– see what I did there!), and found this video sharing one of my favorite holiday desserts, my Vegan Gingerbread Cake. When I was working at Down to Earth teaching cooking classes, we spent some time making cooking videos, and this one features me baking up something awesome! I’m not super camera-ready, but we had a lot of fun making these videos, and now we have a live-action video of my favorite recipe!
This is a recipe that I love dearly– I veganized it from an old Joy of Cooking recipe, and it contains all the things I love about the holidays: pumpkin, spices, and vegan frosting!
